2017 Méthode Traditionelle
“61% Pinot Noir 39% Chardonnay. 35 dozen produced. Alc - 12%. pH - 3.01. TA - 7.68 g/l. R.S: < 1 g/l. Our 2017 Méthode Traditionelle is the result of meticulous winemaking which honours the pinnacle of traditional sparkling wine techniques and philosophies. Pale gold with a persistent bead. Lifted aromas of grapefruit zest, cashew and sea spray layered with complex notes of fresh pastry and nougat. The palate is bright and bursting with Meyer lemon, stonefruit, toasted almond and a long saline finish.” - Ossa Wines
2021 Grüner Veltliner
“100% Grüner Veltliner. 85 dozen produced. Alc - 14%. pH - 3.48. TA: 6.41 g/l. Our Grüner Veltliner makes up a tiny parcel of fruit from the Belbrook vineyard on the East Coast of Tasmania. Gently pressed into seasoned French barriques for indigenous fermentation, the wine was then transferred to stainless steel tanks for further élevage on lees before bottling. Immediately enticing notes of fresh fennel, white stone fruit and lime curd, underlined by classic nuances of savoury white pepper. The palate is taught, and textural. Oak fermentation provides layers of baking spice and fresh almond notes, with lingering flavours reminiscent of Meyer lemon and winter pear.” – Ossa Wines
2020 Chardonnay
“100% Chardonnay. 175 dozen produced. Alc - 13%. pH - 3.4. TA - 6.35 g/l. A combination of Chardonnay clones I10V1 and P58 were gently pressed into large format seasoned French oak for indigenous fermentation. The wine received minimal intervention during the 10 month élevage on lees in barrel prior to bottling. A Chardonnay of both power and finesse. Subtle oak spice and sea smoke add lingering complexity. Under a focused core of ripe stone fruit there lies a pristine acid structure delivering richness and tension across the palate. Layers of grilled hazelnut, salted lime and ripe melon deliver exceptional drinkability.” – Ossa Wines
2022 Pinot Noir
“100% Pinot Noir. 250 dozen produced. Alc - 13.8%. pH - 3.5. TA - 5.81 g/l. Parcels of Pinot Noir clones 777, 114 and D5V12 were fermented separately with small inclusions of whole berry and whole cluster. Matured for 11 months in 500L French oak puncheons (15% new) with minimal intervention prior to bottling. Supple and lithe, intense flavours of cherry, plum, sweet tea and blueberry. Bright mineral acidity frames a generous fruit core overlayed with vibrant red berry and pomegranate lift. Plush, velvet tannins showcase a wine of immense charm and sophistication.” – Ossa Wines
2021 SYRAH
“100% Syrah. 50 dozen produced. Alc - 13.8%. pH - 3.61. TA - 6.3 g/l. Parcels of Syrah clones SARDI-7 and PT23 were fermented separately with small inclusions of whole berry and whole cluster. Matured for 9 months in 500L French oak puncheons (25% new) with minimal intervention prior to bottling. Inky purple, notes of blackberry, white pepper and violet. An intense and alluring expression of cool climate Syrah, bold yet precise with exotic spice, supported by fine-grained tannins.” – Ossa Wines
